The ship, empty, displaces (or weighs) about 20 tons. The designed displacement is 55 tons. Therefore, there are 35 tons available for crew, provisions & water, spare stores and equipment and cargo.
The only difference in a shorter trip would be the need for less water and food. The crew numbers would stay the same, as the number is determined by how many people are needed to handle the ship properly in an emergency, how many it takes to raise sail, and to let half the crew rest while the other half sails the boat.
