What are the toilet facilities onboard?

The toilet on the Jewel is faithful to what sailors would have used in the 9th century. The toilet is called a "zoolie" and they are wooden boxes with a hole in the bottom and suspended over the side of the ship.

You can see photos of the Jewel of Muscat's zoolie in the photo galleries on the website (specifically photo 94 in the "Preparing for Sea photo gallery - http://www.jewelofmuscat.tv/image/tid/25, photos 74, 75 and 76 in the "Fitting Out" photo gallery - http://www.jewelofmuscat.tv/image/tid/23, and you can see a visitor to the Jewel checking out the zoolie in photo 20 in the "Your Jewel" photo gallery - http://www.jewelofmuscat.tv/image/tid/27).
